Insalata con fragole rucola e pollo Strawberry, arugula and chicken salad

English version below

uova
sale, olio extravergine d'oliva, pepe
fiori erba cipollina

Pronti in tavola!

Grilled Asparagus Salad
Ingredients:
A bunch of wild or cultivated asparagus (at least pencil-thick)
Eggs
Salt, extra virgin olive oil, black pepper
Chive blossoms

Instructions:
Prep the asparagus: wash the asparagus thoroughly and trim the woody ends.
Cook the eggs: cook the eggs your preferred way: soft-boiled (6 minutes after the water boils), hard-boiled (8 minutes), or poached.
Grill the asparagus: heat a ridged cast-iron grill pan and cook the asparagus, turning until grill marks appear.
Plate and serve: once cooked, season the asparagus with salt, pepper, olive oil, and chive blossoms. Serve with the cooked eggs.

Tips and substitutions:
For a milder flavor, peel the lower part of the asparagus before grilling.
If you don't have chive blossoms, you can use regular chives, finely chopped. Other herbs like dill or parsley would also work well.
If you don't have a grill pan, you can roast the asparagus in the oven or cook it on a regular frying pan.
This salad is great as a side dish or as a light lunch. You can also add it to a grain bowl or serve it on top of a piece of grilled fish.

Pane senza impasto con farina di segale or No-Knead Bread with Rye Flour

English version below

Pronto in tavola!

No-Knead Bread with Rye Flour
Ingredients:
300g all-purpose flour
100g rye flour + extra for dusting
300ml water
3g active dry yeast
8g fine salt

Instructions:
Combine ingredients: in a bowl, combine the flours, yeast, and salt. Gradually add the water and mix until a dough forms. Cover with plastic wrap and let rest for 12 hours at room temperature, away from drafts and heat sources.
Fold the dough: after 12 hours, gently turn the dough onto a lightly floured surface. Perform a few folds by pinching the dough and folding it inward. Return the dough to the bowl, cover, and let rise for another 2 hours.
Preheat the oven and dutch oven: 30 minutes before the second rise is complete, preheat your oven to 250°C (480°F) and place a cast iron dutch oven with the lid on inside.
Bake the bread: carefully transfer the dough to the hot dutch oven. Cover and bake for 30 minutes. Remove the lid and continue baking for an additional 20 minutes.
Enjoy!

Tips:
Rye flour: rye flour adds a nutty flavor and a denser crumb to the bread. If you can't find rye flour, you can use whole wheat flour for a similar result.
Dutch oven: a dutch oven is ideal for baking bread because it creates a steamy environment that helps the crust develop. If you don't have a dutch oven, you can use a heavy-duty oven-safe pot or baking dish.
Scoring: before baking, you can score the top of the dough with a sharp knife to control the way the bread expands.
Cooling: let the bread cool completely on a wire rack before slicing.
Temperature: The room temperature should be around 20-25°C (68-77°F) for optimal yeast activity.
Rest: he long fermentation period allows the flavors to develop and the gluten to relax, resulting in a tender crumb.
Enjoy your homemade no-knead bread!

Insalata belga in agrodolce or Sweet and sour Belgian endive

English version below

Dove l’ho trovato? Programma TV  Il gusto di Igles

Per realizzare l'insalata belga in agrodolce vi occorreranno:
cespi di insalata belga
pane toscano
burro
olio extravergine
cipolla bionda
aceto - io ho utilizzato l'ottimo aceto di mele dell'Azienda Agricola Feresin
zucchero di canna
salvia
prezzemolo

Pronti in tavola!

Sweet and Sour Belgian Endive
This sweet and sour Belgian endive is a real treat! The caramelized endive is so tender and flavorful, and the crispy croutons add a wonderful texture.

Ingredients:
Belgian endive heads
Tuscan bread
Butter
Extra virgin olive oil
Yellow onion
Vinegar (I used delicious apple cider vinegar from Azienda Agricola Feresin)
Brown sugar
Sage
Parsley

Instructions:
In a pan, melt butter and olive oil. Add the halved endive (with the tough core removed) and a chopped yellow onion. Season with salt and cook covered for 15 minutes.
Sprinkle with brown sugar and cook covered for another 7-8 minutes. Deglaze with apple cider vinegar and let it simmer. Arrange the endive on a serving plate with the caramelized side up.
Add a cube of cold butter to the remaining sauce in the pan and whisk until it emulsifies. Pour the sauce over the endive.
In another pan, heat olive oil and sage. Add small cubes of crustless Tuscan bread and fry until golden brown.
Assemble: place the croutons on top of the endive, sprinkle with chopped parsley, and serve.

Tips:
Vinegar: while apple cider vinegar is a great choice, you can use any vinegar you prefer, such as red wine vinegar.
Bread: tuscan bread is a hearty bread that holds up well to the sauce. You can substitute it with any crusty bread you like.
Sweetness: adjust the amount of brown sugar to taste. If you prefer a sweeter dish, add more.
Serving: this dish is great as a side dish or as a light main course. You can also serve it warm or at room temperature.

Pasta risottata con insalata belga e pancetta croccante Creamy pasta with Belgian endive and crispy pancetta

English version below

4 fette pancetta dolce tagliate spesse
320g penne o altro formato di pasta corta
6 cespi di insalata belga
1 cipolla bionda
pepe
prezzemolo
olio extravergine d'oliva e sale

Pepate e portate in tavola!

Creamy Pasta with Belgian Endive and Crispy Pancetta
This creamy pasta dish is packed with flavor! The sweet pancetta pairs perfectly with the slightly bitter Belgian endive. The vegetable broth adds a depth of flavor to the dish  and for a vegetarian option, you can omit the pancetta and add some toasted pine nuts or breadcrumbs.

Ingredients:
4 thick slices of sweet pancetta
320g penne pasta or other short pasta
6 Belgian endive heads
1 yellow onion
Salt and pepper to taste
Fresh parsley
Extra virgin olive oil

Instructions:
Make the vegetable broth: in a pot, sauté the outer leaves, core, and peel of the Belgian endive along with the outer layer of the onion in olive oil. Add 2 liters of water and simmer for 20 minutes. Strain the broth.
Sauté the endive: in a pan, sauté the remaining chopped onion in olive oil. Add the julienned outer leaves of the Belgian endive and cook over low heat for 20 minutes, covered. Reserve the hearts of the endive for another recipe.
Cook the pasta: in a large pot, bring salted water to a boil and cook the pasta according to the package instructions.
Cook the pancetta: while the pasta is cooking, fry the pancetta in a pan until crispy.
Combine: drain the pasta and add it to the pan with the sautéed endive. Toss to combine.
Serve: plate the pasta and top with a drizzle of olive oil, chopped parsley, and crispy pancetta. Season with salt and pepper to taste.

Tips:
Vegetable broth: the chef suggests using bottled water, but tap water can also be used.
Belgian endive: the heart of the Belgian endive can be used in salads or roasted.
Pasta: you can use any type of short pasta you like, such as penne, rigatoni, or fusilli.
Pancetta: if you can't find sweet pancetta, you can substitute it with bacon.
Serving: this dish can be served as a main course or a side dish.

Amatriciana di mare con i moscardini or Seafood Amatriciana with baby octopus

English version below

Pronti in tavola!

Seafood Amatriciana with baby octopus
This Seafood Amatriciana is a delicious twist on a classic Italian dish. The tender baby octopus and rich tomato sauce are the perfect combination. The Pecorino Romano cheese adds a salty, tangy flavor that really brings everything together. It's a simple dish to make, but it's packed with flavor.

Ingredients:
400g short pasta (I prefer rigatoni)
500g baby octopus
1 bottle of homemade tomato passata or 400g San Marzano tomatoes
100g grated Pecorino Romano cheese
1/2 cup dry red wine
Salt, pepper, and extra virgin olive oil
Basil

Instructions:
Sauté the octopus: in a pan with olive oil, sauté the cleaned and chopped baby octopus until lightly browned.
Add the sauce: add the tomato passata (or crushed San Marzano tomatoes), a pinch of salt and pepper. Cook for about 10 minutes, uncovered.
Cook the pasta: while the sauce is simmering, cook the pasta in salted water until al dente.
Combine: drain the pasta and add it to the pan with the octopus sauce. Toss to coat.
Serve: serve the pasta in bowls, topped with plenty of grated Pecorino Romano cheese, a generous grind of black pepper, and fresh basil leaves.

Tips:
Homemade tomato passata will give the dish a more intense flavor, but store-bought is fine too.
Pecorino Romano is a hard, salty cheese that is essential for this dish. If you can't find Pecorino Romano, you can use Parmesan cheese.

English version below

Sapore: Ancora un piatto da 10/10 meravigliosamente buono
Complessità: Semplice da fare e anche veloce
Dove l’ho trovato?

Cannelloni prosciutto crudo e funghi

English version below

Sapore: 10/10 meravigliosamente buoni
Complessità: Semplice, soprattutto se utilizzate pasta fresca all'uovo pronta
Dove l’ho trovato? Visto in TV taaaanto tempo fa

250g di pasta fresca all'uovo in fogli
500g di funghi champignon
1 scalogno
100ml panna
200g prosciutto crudo Parma
olio extravergine
burro
parmigiano grattugiato
sale

per la besciamella:
50g di burro
50g farina
500g latte
sale, parmigiano, pepe bianco

Pronti in tavola!

This recipe for white cannelloni with prosciutto and champignon mushrooms uses the following ingredients:

250g fresh egg pasta sheets
500g champignon mushrooms
1 shallot
100ml heavy cream
200g Parma prosciutto
Extra virgin olive oil
Butter
Grated Parmesan cheese
Salt

For the Béchamel Sauce:
50g butter
50g all-purpose flour
500ml milk

Salt, Parmesan cheese, white pepper

Instructions:
Make the Béchamel Sauce: Start by melting the butter in a small saucepan. Add the flour and toast it, stirring with a whisk. Immediately add all the pre-heated milk. Bring to a boil, then cook over low heat for just under ten minutes. Add salt, white pepper, two tablespoons of grated Parmesan cheese, and let it cool slightly.

Prepare the Prosciutto: Grind the prosciutto. If you don't have a meat grinder, finely chop it in a food processor or with a knife.

Cook the Mushrooms: Sauté the sliced champignon mushrooms in a little olive oil, in which you've previously browned the chopped shallot. Salt them and cook until done, adding the fresh cream in the last few minutes. Let cool slightly, then blend.

400g leeks
60g roasted cooked ham
100ml vegetable broth
2-3 tablespoons all-purpose flour
4 tablespoons ground turmeric
100ml heavy cream
5g poppy seeds
30g extra virgin olive oil

Instructions:
Start by slicing the roasted cooked ham into strips.
Next, take the leek, remove the root and the tough, dark green parts. Cut it in half lengthwise, then slice it into thin strips.
In a pan with a very small amount of oil, add the ham strips, then add the leeks and let them soften for a few minutes. Season with a little salt and set aside.
Cut the chicken breast first into slices, then into bite-sized pieces of your preferred size. In a bowl, combine the turmeric and the chicken pieces, along with the flour, mixing well to ensure the turmeric coats the meat. Season generously with pepper.
In a pan with a little oil, brown the chicken, making sure to toast the turmeric. Season with salt and more pepper. Then, add the heavy cream followed by the vegetable broth, and cook until the chicken is done.
Just before the chicken is fully cooked, stir in the poppy seeds.
To serve, arrange the cooked ham and leeks on the bottom of a plate, then top with the turmeric chicken and its sauce.
Enjoy your meal!
