Caponatina piccante con riso nero alla maggiorana

Per realizzare la caponatina piccante con riso nero alla maggiorana vi occorreranno:
150g di riso nerone
1 peperone
1 melanzana
2 zucchine medie
1 pomodoro
1 cipolla ramata
qb di peperoncino in polvere secco
4 cucchiai di olio extravergine d'oliva
1 cucchiaino di maggiorana
1 cucchiaino di capperi sotto sale
aceto di vino bianco
sale

Cominciate con il cuocere il riso in acqua bollente salata per 40 minuti, dopo averlo lasciato a bagno per una mezz'ora in acqua fredda. Scolatelo e conditelo subito con olio extravergine e maggiorana, lasciandolo quindi raffreddare.
Preparate la caponatina tagliando tutte le verdure a pezzetti.
In una larga padella mettete a scaldare l'olio, unite il peperoncino, i capperi risciacquati e, in ordine, le cipolle, le melenzane e via via tutte le altre verdure. Salare e dopo dieci minuti aggiungere un paio di cucchiai di aceto. Portare a cottura a fiamma bassa.
Servire quindi il riso nero profumato alla maggiorana con la caponatina di verdure.
