Salt Cod with Sautéed Tuscan Kale and Saffron Potatoes
To make this salt cod with sautéed Tuscan kale and saffron potatoes following Chef Marco Valletta's recipe, here is what you'll need:
1.75 lbs (800g) Tuscan kale (cavolo nero), 7 oz (200g) potatoes, 3.5 oz (100g) onion, 1.3 lbs (600g) soaked salt cod (desalted and deboned), 1 garlic clove, 2 tbsp (30g) extra virgin olive oil, 1/2 cup (100 ml) vegetable broth, 1.7 oz (50g) pitted black olives, 1.5 tbsp (20g) capers, and 1 packet of powdered saffron.
Thinly slice the onion and matchstick-cut (julienne) the potatoes. Strip away the tough central ribs from the kale, blanch the leaves in boiling salted water, then drain and coarsely chop them.
You will be working with two pans.
In the first pan, heat half of the olive oil and add the onion and potatoes. Soften them by adding the hot vegetable broth, then season with the saffron. Cook through and add salt to taste.
In the second pan, heat the remaining olive oil with the garlic clove, capers, and black olives. Add the kale and sauté until tender. Once done, remove the kale from the pan and set it aside. Place the salt cod fillets skin-side down in the same pan, cover with a lid, and cook through. Move the cod to one side of the pan and return the kale, letting everything mingle so the fish absorbs all those delicious flavors.
To serve, arrange a golden bed of potatoes and onions on each plate, top with the kale, olives, and capers, and finish with the salt cod and a drizzle of extra virgin olive oil.
Ready to eat!
